Ingredients

  • 1 pound penne pasta
  • 1 pound asparagus fresh
  • 1 cup olive oil
  • 1 count lemon juice only
  • 4 cloves garlic pressed
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper freshly ground
  • 1 cup Parmesan cheese grated

Directions

  1. Cook pasta according to package instructions.   While pasta cooks prepare asparagus, cutting diagonally into 1-2 inch pieces.
  2. Add asparagus to boiling pasta about 3 minutes before pasta is done.
  3. Drain pasta and asparagus and set aside.
  4. In a bowl combine the olive oil, juice of lemon, garlic, parsley, salt and pepper.
  5. Toss pasta and asparagus with mixture and refrigerate for at least one hour.
  6. Sprinkle with Parmesan cheese and serve!
