Pasta Salad with Fresh Asparagus

Ingredients
- 1 pound penne pasta
- 1 pound asparagus fresh
- 1 cup olive oil
- 1 count lemon juice only
- 4 cloves garlic pressed
- 2 tablespoons fresh parsley chopped
- 1 teaspoon salt
- 1 teaspoon pepper freshly ground
- 1 cup Parmesan cheese grated
Directions
- Cook pasta according to package instructions. While pasta cooks prepare asparagus, cutting diagonally into 1-2 inch pieces.
- Add asparagus to boiling pasta about 3 minutes before pasta is done.
- Drain pasta and asparagus and set aside.
- In a bowl combine the olive oil, juice of lemon, garlic, parsley, salt and pepper.
- Toss pasta and asparagus with mixture and refrigerate for at least one hour.
- Sprinkle with Parmesan cheese and serve!
