Stuffed Pork Tenderloin

  • 1/4 cup onion
  • 3 pound pork tenderloin
  • 1/8 teaspoon ground allspice
  • 1 cup bread cubes seasoned
  • 1/4 cup butter or margarine
  • 1/2 cup fruit bits dried
  • 2 tablespoon apple juice
  • 1 tablespoon fresh parsley
  • 1 tablespoon chopped walnuts
  • 1/4 teaspoon salt
  • 2 tablespoon apple jelly


    1. Preheat 375 degrees F.
    2. Cut tenderloin almost through lengthwise. Place meat between two pieces of plastic wrap and pound to 1/2-inch thickness. Season with salt and pepper.
    3. In a medium skillet, cook onion in butter or margarine until tender. Stir in fruit bits, apple juice, parsley, walnuts, salt and allspice. Add crushed bread cubes and toss to blend well. Spoon stuffing mix on top of meat; then roll up, pinching ends to seal. Tie stuffed tenderloin with kitchen twine or secure with toothpicks, and place seam-side down in a shallow baking pan.
    4. Rub top of tenderloin with butter if desired. Bake uncovered at 400 degrees for 1 hour or until meat is no longer pink. Spoon jelly over meat during last 10 minutes of baking.
