Lite Stir Fry Pork

Ingredients

  • 1 1/4 pound pork tenderloin
  • 1/4 cup water
  • 3 tablespoon soy sauce reduced sodium
  • 2 tablespoon sherry dry
  • 1 1/2 tablespoon vegetable oil
  • 1/2 pound mushrooms
  • 1 clove garlic
  • 1 tablespoon cornstarch
  • 1 medium iceberg lettuce
  • 12 ounce snow peas frozen

Directions

    1. Cut pork into 1/4-inch slices and place in a medium bowl. Add water, soy sauce and sherry; stir to coat. Let stand for 15 minutes.
    2. Meanwhile, heat oil in a wok or large frying pan. Add garlic, mushrooms, and snow peas; cook quickly for 3 to 4 minutes, stirring constantly. Remove vegetables from pan and set aside. Remove meat from marinade and cook, stirring constantly, for 5 to 7 minutes or until done.
    3. Mix cornstarch with reserved marinade; add to pork along with mushrooms and snow peas. Cook until mixture thickens.
    4. Serve on on a bed of lettuce.
