Caribbean Pork

  • 1 tablespoon vegetable oil
  • 1 1/2 tablespoon brown sugar
  • 2 teaspoon cornstarch
  • 2 teaspoon lime or lemon juice
  • 1/4 teaspoon ground ginger
  • 4 count pork chops
  • 1 clove garlic
  • 1 can mandarin oranges


    1. Season pork chops with salt and pepper.
    2. Heat oil in a skillet over medium-high heat.
    3. Cook pork chops and garlic in hot oil until chops are browned on both sides.
    4. Meanwhile, drain orange sections, reserving liquid. Set orange sections aside. In a bowl or cup, combine 1/4 cup orange liquid, brown sugar, cornstarch, lime or lemon juice, and ginger; mix well.
    5. Pour mixture over pork chops in a skillet. Cover pan, reduce heat to low, and simmer for 8 to 10 minutes or until chops are tender.
    6. Place chops on a serving platter and keep warm. Add orange sections to sauce in skillet; stir to coat. Pour sauce over chops before serving.
