Pork Chops and Rice

  • 1 tablespoon shortening
  • 1/2 medium onion
  • 1 can chicken broth
  • 2/3 cup long grain rice dry
  • 2 tablespoon fresh parsley
  • 1/4 teaspoon salt
  • 6 count pork rib chops


    1. Melt shortening in a large skillet. Cook chops in shortening until well browned. Remove chops from skillet; drain off excess fat.
    2. In skillet, combine broth, rice, onion, parsley and salt; heat mixture just to boiling. Arrange browned chops on top of rice mixture. Cover pan, reduce heat to low, and simmer until chops are tender and rice is fully cooked (about 30 to 35 minutes). Fluff rice with fork before serving.
