Herb Marinated Lamb Steaks

  • 2/3 cup vegetable oil
  • 1/2 cup onion
  • 1/4 cup vinegar cider
  • 1/4 cup wine red
  • 1 teaspoon salt
  • 1/2 teaspoon rosemary
  • 1/2 teaspoon thyme dried
  • 1/8 teaspoon pepper
  • 1/2 cup jelly mint
  • 1 clove garlic


    1. Slash fat edges of lamb steaks in several places so steaks will remain flat during cooking. Place steaks in a plastic bag, and place bag in a deep bowl. Chop onion and mince garlic. In a small bowl or cup, combine all remaining ingredients except mint jelly. Reserve 3 tablespoons of the marinade; pour remaining mixture over steaks in plastic bag. Seal bag and refrigerate for 6 hours, turning occasionally.
    2. Remove steaks from marinade and discard marinade. Place steaks on an unheated rack in a broiler pan. Broil three inches from heat for 5 to 7 minutes. Turn steaks and continue to broil for 5 to 7 minutes longer or until desired done-ness is reached.
    3. Combine 3 T. of reserved marinade and mint jelly; mix well. Serve steaks with marinade-jelly sauce.
