Stuffed Veal Breast

  • 2 pound veal breast
  • 1/2 cup celery
  • 1/4 cup butter or margarine
  • 1/2 cup carrots
  • 1/4 cup wine white dry
  • 1/2 teaspoon poultry seasoning
  • 1 1/2 cup stuffing mix herb flavored
  • 12 ounce sausage sage flavored
  • 1/8 teaspoon paprika
  • 1 cup water
  • 1 count onion
  • 1/2 teaspoon pepper


    1. Pound veal to 1-inch thickness; meat should measure about 9x10 inches. Season with salt and pepper; then set aside.
    2. In a medium skillet, cook celery in butter or margarine until tender. Stir in carrot, wine and poultry seasoning; then remove from heat. Add stuffing mix and sausage; toss to blend well.
    3. Spoon stuffing mixture evenly over meat. Starting from a narrow end, roll up meat tightly. Tie with kitchen twine. Place roast seam-side down on a rack in a roasting pan. Top with onion slices and sprinkle with paprika. Pour water into bottom of roasting pan.
    4. Cover and bake at 400 degrees F for 30 minutes. Reduce heat to 350 degrees F and continue baking for 2 hours to 2 hours and 30 minutes or until meat is tender. Cut away and discard strings; cut meat into slices and serve.
