Chicken Piccata

  • 2 tablespoon fresh parsley
  • 1/4 cup flour
  • 1/2 teaspoon pepper
  • 1/4 cup butter or margarine
  • 1 cup mushrooms
  • 1/4 cup wine white dry
  • 2 tablespoon lemon juice
  • 2 count chicken breasts
  • 1 clove garlic
  • 1/2 teaspoon salt


    1. Cut chicken breasts in half lengthwise. Place chicken between two pieces of plastic wrap and pound to 1/2 inch thickness. Season with salt and pepper; coat with flour.
    2. Melt 3 tablespoons butter or margarine in a large skillet; add chicken and saute over medium heat until lightly browned (about 5 minutes). Remove chicken from skillet and keep warm.
    3. Add remaining 1 tablespoon butter or margarine to skillet; then add mushrooms and garlic. Cook until mushrooms are tender (about 5 to 7 minutes). Return chicken to skillet; add wine or broth and lemon juice. Simmer for 7 to 10 minutes, stirring occasionally, until sauce thickens slightly. Garnish with parsley before serving over rice or pasta.
