Chicken Stir Fry

  • 1 teaspoon herb seasoning
  • 1 teaspoon cornstarch
  • 1/4 cup green onion
  • 1 teaspoon soy sauce
  • 1 pound chicken breasts
  • 2 tablespoon oil safflower
  • 8 ounce mushrooms
  • 12 ounce spinach
  • 2 tablespoon slivered almonds
  • 1 count egg white
  • 1 count garlic


    1. In a bowl, combine egg white, cornstarch, herb seasoning and soy sauce; beat with a whisk until well blended and frothy. Add chicken and toss to coat evenly. Refrigerate for 20 minutes.
    2. Heat oil in a wok or large skillet over high heat. Add chicken and stir-fry until chicken turns white (about 4 minutes). Add mushrooms, onions and garlic; stir-fry for about 2 minutes or until vegetables are tender-crisp. Add spinach and almonds; cook until heated through (about 3 minutes). Serve immediately with rice
