Chicken Kabobs with Hawaiian Relish

  • 1 cup papaya chunks
  • 1/2 cup sweet red pepper
  • 2 tablespoon chilies diced green
  • 1 teaspoon fresh cilantro
  • 1 tablespoon honey
  • 1 count lime
  • 1 count pineapple
  • 4 count chicken breast halves bnls sknls


    1. Grate peel from lime and squeeze juice; set aside.
    2. Cut one half of the pineapple into tidbits; reserve other half for future use. In a mixing bowl, combine pineapple tidbits, papaya, pepper, chilies and cilantro.
    3. Pour remaining lime juice into a small bowl; add honey and mix. Cut chicken into 8 to 10 chunks. Spoon 1 tablespoon of the lime-honey mixture over chicken; then thread chicken on skewers.
    4. Broil or grill chicken over medium heat for 4 to 6 minutes. Spoon remaining lime-honey mixture over chicken. Broil or grill 4 to 5 minutes longer or until thoroughly cooked. Place cooked chicken on a plate, cover, and let stand for 2 minutes. Garnish with grated lime peel and serve with pineapple relish.
