Chicken Primavera

Ingredients

  • 2 clove garlic
  • 4 ounce linguine
  • 2 tablespoon tomato paste
  • 2 tablespoon wine red
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon basil dried
  • 1 cup asparagus spears
  • 1 cup mushrooms
  • 1 tablespoon vegetable oil
  • 1 medium tomato
  • 1/4 cup olives ripe pitted
  • 1 tablespoon fresh parsley
  • 1/2 cup Parmesan cheese
  • 2 count chicken breasts

Directions

    1. Cook linguine according to package directions; drain and keep warm. In a small bowl or cup, combine tomato paste, red wine or water, sugar, salt and basil; set aside.
    2. In a large skillet, cook asparagus and mushrooms in oil over medium heat for 1 1/2 minutes or until vegetables are crisp-tender. Remove vegetables from skillet and keep warm.
    3. Add chicken and garlic to skillet; cook for 3 minutes or until chicken is done. Stir in reserved tomato paste mixture, vegetables, tomato and olives; cook, stirring frequently, for 1 to 2 minutes or until mixture is heated through. Toss chicken mixture with linguine; top with parsley and parmesan cheese.
    4. Toss chicken mixture with linguine; top with parsley and parmesan cheese.
