Garden Turkey Loaf

To cook in a microwave oven- Place a glass in the center of a 2 quart glass casserole dish. Spoon turkey mixture around glass to form a ring. Cover with waxed paper. Microwave on High for 15 to 20 minutes or until turkey is no longer pink


  • 2 pound ground turkey
  • 1 medium onion
  • 1 can stewed tomatoes
  • 1 cup bran flakes (or high protein cereal)
  • 1/2 cup fresh parsley
  • 1/2 teaspoon basil dried
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 count eggs
  • 2 count carrots


    1. Combine all ingredients except 1/4 cup shredded carrot; mix well. Spoon mixture into a lightly greased 9x5 inch loaf pan.
    2. Bake at 350 degrees for 1 hour 30 minutes. Pour off drippings; place turkey loaf on a serving platter. Sprinkle with shredded carrot on top for garnish.
