Asparagus Casserole

- Servings: 8 servings
Use a food processes or chopper to make bread crumbs.
Ingredients
- 1/2 cup milk
- 6 tablespoon flour
- 1 cup cheddar cheese extra sharp shredded
- 1/4 cup butter or margarine
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoon pimiento diced
- 2 pound asparagus fresh cleaned
- 1 can water chestnuts
- 2 slice bread or bread crumbs
Directions
- Clean asparagus for eating and place in a buttered shallow baking dish. Drain water chestnuts, reserving liquid, and arrange over asparagus. Set aside.
- Whisk reserved liquid, milk and flour; blending until smooth. In a saucepan, combine liquid mixture with cheese, butter or margarine, salt and pepper; cook over low heat, stirring constantly, until mixture thickens. If too thick add more milk until gravy like consistency. Stir in pimiento; pour sauce evenly over ingredients in casserole.
- Food process bread slices and make crumbs.Top casserole with bread crumbs.
- Bake at 375 degrees for 30 minutes or until top is lightly browned and sauce is bubbly.
