Carrot Souffle

  • 1 pound carrots
  • 1 cup sugar
  • 1/2 cup butter or margarine
  • 3 tablespoon flour all purpose
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 3 count eggs


    1. Place carrots in a saucepan and add water to cover; cook until tender but not soft (about 15 minutes). Drain carrots.
    2. In a medium mixing bowl, combine carrots with all remaining ingredients; beat with an electric mixer until smooth. Pour into a greased casserole dish.
    3. Bake at 350 degrees for 1 hour.
