Zesty Carrots

  • 1/4 cup bread crumbs
  • 6 count carrots
  • 1/8 teaspoon pepper
  • 2 tablespoon onions
  • 2 tablespoon horseradish
  • 1/4 cup water
  • 1/2 cup mayonnaise
  • 1 tablespoon butter or margarine


    1. Wash and peel carrots; cut into slices or thin strips. Place carrots in a saucepan, add cold water to cover, and bring to a boil. Reduce heat, cover pan, and simmer until carrots are tender but firm (about 7 to 10 minutes). Immediately drain carrots and rinse with cold water to stop cooking.
    2. Preheat oven to 375 degrees. Grease a 1-1/2 quart baking dish with 1 tablespoon butter or margarine (or spray dish with no-stick cooking spray). Place drained carrots in prepared baking dish.
    3. In a mixing bowl, combine mayonnaise, water, horseradish, onions and pepper; mix well. Pour sauce over carrots; sprinkle with bread crumbs.
    4. Bake at 375 degrees for aout 20 to 25 minutes or until heated through and crumbs are golden.
