Zucchini Pepper Combo

NOTE: To cook on a covered barbecue grill

Ingredients

  • 10 tablespoon cheese Parmesan
  • 1/4 cup bread crumbs dry seasoned
  • 1/4 cup butter or margarine
  • 1 count sweet red pepper
  • 1 count green pepper
  • 1/4 cup cottage cheese
  • 2 1/2 teaspoon garlic salt
  • 1 tablespoon oregano
  • 1 medium onion
  • 4 medium tomatoes
  • 4 small zucchini

Directions

    1. Combine zucchini, tomatoes, onion, green pepper, and red pepper in a greased 13x9 inch baking dish. In container of a food processor, combine cottage cheese, butter or margarine, 1/2 cup parmesan cheese, oregano and garlic salt; process until smooth. Spoon cottage cheese mixture over vegetables and stir to combine. Cover baking dish tightly with foil.
    2. Bake at 350 degrees for 45 minutes.
    3. Combine bread crumbs and 2 tablespoons parmesan cheese. Remove foil and sprinkle bread-crumb mixture over vegetables. Bake uncovered for 30 minutes longer or until hot and bubbly.
