Lemon Tea Loaf

  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/3 cup lemon juice
  • 1/4 cup buttermilk
  • 2 tablespoon lemon peel
  • 1/2 cup walnuts
  • 2 count eggs
  • 2 cup flour all purpose
  • 2/3 cup sugar
  • 1 teaspoon baking powder


    1. Grease a 9x5x3-inch loaf pan; set aside. Preheat oven to 375 degrees.
    2. Combine flour, sugar, baking powder, baking soda and salt; sift together into a mixing bowl. In a separate bowl, combine oil, lemon juice, buttermilk, eggs and lemon peel; blend well. Add half of the lemon mixture to dry ingredients and beat with an electric mixer for 2 minutes or until well blended. Add remaining lemon mixture and beat 2 more minutes or until well blended. Fold in nuts. Pour batter into prepared pan.
    3. Bake at 375 degrees for 45 to 50 minutes or until bread tests done. Remove from oven and cool in pan for 10 minutes; then remove bread from pan and place on a wire rack to continue cooling.
