Tufts Apple-Banana Muffins

Ingredients
- 1 cup flour all purpose
- 1 large banana
- 4 teaspoon baking powder
- 1/3 cup sugar
- 1/4 cup wheat germ
- 3/4 cup oats rolled old fashion
- 3/4 cup flour whole wheat
- 1 count egg
- 1/2 cup milk skim
- 1/2 cup orange juice
- 1/4 cup oil canola
- 1/2 cup apple
- 1/2 cup raisins
Directions
- Spray muffin cups with no-stick cooking spray or line with paper liners; set aside. Preheat oven to 400 degrees.
- In a large mixing bowl, combine flours, oats, wheat germ, sugar and baking powder; mix well. In a separate bowl, combine mashed banana, milk, orange juice, oil, and egg; mix with a wire whisk until well blended. Add banana mixture to flour mixture, stirring just until dry ingredients are moistened. Stir in apple and raisins. Pour or spoon batter into prepared muffin cups.
- Bake at 400 degrees for 20 minutes or until a toothpick inserted in center comes out clean. Remove muffins from pan and cool on a rack.
