Lemon Poppy Seed Muffins

  • 2 cup flour all purpose
  • 2 count eggs
  • 4 teaspoon poppy seeds
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3/4 cup sugar
  • 1/2 cup butter or margarine
  • 1 cup buttermilk
  • 1 count lemon (2 tablespoons grated lemon rind)
  • 1 teaspoon vanilla extract


    1. Grease muffin cups or line with paper liners; set aside. Preheat oven to 400 degrees.
    2. In a mixing bowl, combine flour, lemon rind, poppy seeds, baking powder; set aside. In another large mixing bowl, cream sugar and butter or margarine until fluffy. Add eggs to creamed mixture, and beat until smooth; add buttermilk and vanilla, mixing well. Add flour mixture to creamed mixture, stirring just until dry ingredients are moistened. Spoon or pour batter into prepared muffin cups, filling each cup three-fourths full.
    3. Bake at 400 degrees for 20 minutes or until golden. Serve warm.
