Bran Muffins

  • 2 1/2 cup milk
  • 3 cup cereal bran shredded
  • 1/2 cup vegetable oil
  • 1 1/2 cup flour all purpose
  • 1 cup flour whole wheat
  • 1 cup sugar
  • 2 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 can pineapple crushed
  • 2 count eggs


    1. Grease muffin cups or line with paper liners; set aside. Preheat oven to 400 degrees.
    2. In a small bowl, combine cereal and milk; set aside to soak for 5 minutes. In another small bowl or cup, blend oil and eggs. In a large mixing bowl, combine flours, sugar, baking powder and salt. Add cereal and egg mixtures to dry ingredients; mix well. Stir in pineapple. Pour or spoon batter into prepared muffin cups, filling each cup three-fourths full.
    3. Bake at 400 degrees for 20 minutes.
