Mile High Apple Pie

  • 1/2 cup chopped pecans
  • 1/2 teaspoon salt
  • 2 1/4 cup flour
  • 1/4 cup butter or margarine
  • 1/4 teaspoon salt
  • 1/3 cup sugar
  • 1 cup flour
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground nutmeg
  • 2 teaspoon cinnamon ground
  • 1 cup sugar
  • 4 tablespoon water cold
  • 5 tablespoon butter or margarine
  • 8 count apples Granny Smith
  • 1/2 cup vegetable shortening


    1. To prepare pastry: In a large mixing bowl, combine 2 1/4 cup flour and 1/2 teaspoon salt. Cut shortening and 5 tablespoons butter or margarine into flour mixture until coarsely blended. Gradually add water, stirring gently until dough clings together when pressed between your fingers. Form dough into two balls, one slightly larger than the other; wrap in plastic wrap and refrigerate.
    2. To prepare Apple filling: Peel, core and thinly slice apples. Place apple slices in a large pot, cover and cook over medium-low heat, stirring occasionally, until barely tender (about 10 minutes). Drain apple slices completely. Transfer apples to a large bowl and add sugar, cinnamon, nutmeg and vanilla; stir gently to blend. Set aside.
    3. To prepare Butter Pecan Crumb: In a medum bowl, combine 1 cup flour, 1/3 cup sugar and 1/4 teaspoon salt. Cut 1/4 cup butter or margarine into flour mixture until coarsely blended. Add pecans and rub mixture briefly between fingers to form crumbs.
    4. Preheat oven to 400 degrees. Roll out smaller piece of dough to form an 11-inch round; press onto the bottom and sides of a 9-inch pie plate. Fill pie shell with apple filling, mounding in the center. Roll out larger piece of dough to a 12-inch round; place on top of the pie, covering filling. Trim and pinch edges of bottom an top crusts to seal.
    5. Brush top crust lightly with water; then gently press crumb topping onto top crust. Make several slits in top crust to allow steam to vent.
    6. Bake at 400 degrees for 45 to 50 minutes or until crust is golden brown. Cool for at least 25 minutes and serve.
