Pumpkin Pie Squares

Ingredients

  • 1/4 teaspoon nutmeg
  • 1 cup flour
  • 1/2 cup oats rolled quick
  • 1/2 cup brown sugar
  • 1/2 cup butter or margarine
  • 1 can pumpkin solid pack
  • 1 can evaporated milk
  • 3/4 cup sugar
  • 1 teaspoon cinnamon ground
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans
  • 2 tablespoon butter or margarine
  • 1/4 teaspoon ground clove

Directions

    1. Preheat oven to 350 degrees.
    2. To prepare Crust: Combine all crust ingredients i(beginning with 1 cup flour and finishing with 1/2 cup butter or margarine) in a mixing bowl or food processor container; blend until crumbly. Press mixture onto bottom only of an ungreased 9x13 baking dish. Bake at 350 degrees for 20 minutes.
    3. To prepare filling: (while crust is baking), Combine all filling ingredients (beginning with pumpkin and ending with salt) in a mixing bowl; beat until smooth and well blended. Pour filling over baked crust. Bake at 350 degrees for 20 minutes.
    4. To prepare topping (while filling is baking): combine all topping ingredients (brown sugar, pecans and 2 tablespoons butter) in a mixing bowl; mix well. Sprinkle or dot topping evenly over baked filling. Return pan to oven a third time and bake for 15 to 20 minutes or until filling is set.
    5. Remove from oven and cool in pan; then cut into 2-inch squares. Lift squared out of pan with a spatula. Refrigerate any leftovers.
    This can be made a day ahead and stored in the fridge.  Remove from refrigerator and let stand at room temperature for about 30 minutes before serving.
