Chocolate Earthquake Cookies

  • 2 1/2 cup flour
  • 1 count sugar Confectioners
  • 2 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 4 ounce chocolate unsweetened
  • 2 teaspoon vanilla
  • 4 count eggs


    1. In a mixing bowl, combine flour, sugar, baking powder, salt, oil and chocolate (melted); mix well. Add eggs, one at a time, mixing well after each addition. Stir in vanilla. Cover and chill for at least 4 hours or overnight.
    2. Lightly grease two baking sheets or spray with no-stick cooking spray; set aside.
    3. Form chilled dough into walnut sized balls; then roll in confectioners sugar to coat. Place balls on prepared cookie sheets.
    4. Bake at 375 degrees for 8 to 10 minutes. Cool slightly before removing from baking sheet.
