Oatmeal Coconut Cookies

  • 1 cup shortening
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 package instant vanilla pudding mix
  • 1 teaspoon vanilla
  • 2 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cup oats rolled
  • 1/2 cup shredded or flaked coconut
  • 1/2 cup raisins
  • 1/4 cup nuts chopped
  • 2 count eggs


    1. Grease two baking sheets or spray with no-stick cooking spray; set aside. Preheat oven to 350 degrees.
    2. In a mixing bowl, combine brown sugar, granulated sugar, shortening and pudding mix; cream until thoroughly blended. Add eggs and mix lightly; then add vanilla.
    3. Combine flour, baking soda and salt; add to creamed mixture and blend well. Stir in oats, coconut, raisins and nuts, if desired; mix well. (dough will be very thick.)
    4. Drop mixture by the tablespoonfuls onto prepared baking sheets.
    5. Place baking sheets on middle rack of oven and bake at 350 degrees for 10 to 12 minutes.
