Raspberry Walnut Shortbread Bars

  • 1/8 teaspoon baking soda
  • 2 count eggs
  • 1 cup chopped walnuts
  • 1/2 cup brown sugar
  • 2 tablespoon flour
  • 1 teaspoon vanilla
  • 1/3 cup jam raspberry
  • 1/2 cup butter or margarine
  • 1/2 cup sugar
  • 1 1/4 cup flour all purpose


    1. Lightly grease a 9-inch square pan; set aside. Preheat oven to 350 degrees.
    2. To prepare Crust: In a mixing bowl, combine 1 1/4 cups flour and 1/2 cup sugar; cut in butter or margarine using a pastry blender or fork until mixture resembles fine meal. Press mixture into prepared pan. Bake at 350 degrees for 20 minutes or until edges are lightly golden. Spread raspberry jam over hot crust.
    3. To Prepare Topping: In a mixing bowl, combine brown sugar, eggs and vanilla; beat well. Combine 2 tablespoons flour and baking soda; stir into creamed mixture. Fold in walnuts. Spoon evenly over jam, spreading lightly to cover corners.
    4. Return to oven and bake for 20 to 25 minutes or until topping is set.
    5. Cool completely; then cut into bars.
