Microwave Peanut Brittle

Yield: 1 pound of candy


  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoon baking soda
  • 1 tablespoon butter or margarine
  • 1 1/2 cup peanuts raw
  • 1/2 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 cup sugar


    1. Butter a baking sheet; set aside.
    2. In a 3-quart microwave-safe glass dish, combine sugar, corn syrup and salt; stir in peanuts. Cook in microwave oven on High for 8 to 10 minutes or until mixture is light brown, stirring twice during cooking.
    3. Remove from microwave oven and stir in butter or margarine, baking soda and vanilla; mix until light and foamy. Quickly pour mixture onto prepared baking sheet, spreading as thin as possible.
    4. When cool, break into pieces.
