Cajun Barbeque Sauce with Chicken or Fish

NOTE: Firm fish such as orange roughy


  • 1 can tomato paste
  • 3/4 cup chicken broth
  • 1/2 cup lemon juice
  • 2 tablespoon brown sugar
  • 2 tablespoon cottage cheese
  • 2 tablespoon creole seasoning
  • 2 tablespoon Worcestershire sauce
  • 1/2 cup vegetable oil
  • 1 count onion
  • 8 count chicken breast halves or fish


    1. In container of a food processor, combine tomato paste, chicken broth, lemon juice, brown sugar, cottage cheese, creole seasoning, worcestershire sauce and chopped onion; process until smooth. Add oil and pulse three or four times until well blended.
    2. Place chicken or fish in a single layer in a large, flat glass dish; pour sauce evenly over top. Cover and refrigerate for 3 to 4 hours, turning once.
    3. Remove chicken or fish from sauce and grill over hot coals to desired doneness. Serve immediately.
