Spanish Rice

Brown rice can be used instead of long grain.


  • 1 tablespoon canola oil
  • 1/4 teaspoon hot sauce
  • 4 ounce chiles diced green
  • 3/4 cup long grain rice
  • 28 ounce tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon sugar
  • 1 cup water
  • 1/8 teaspoon pepper
  • 1 clove garlic
  • 1/2 cup green pepper
  • 1/2 cup onion
  • 1/4 teaspoon salt


    1. In a large skillet cook onion, sweet pepper, and garlic in hot oil until tender. Add chili powder; cook 1 minute more.
    2. Stir in undrained tomatoes, rice, chile peppers, hot pepper sauce (if desired), water, sugar, salt, and black pepper. Bring to boiling; reduce heat. Simmer, covered, about 20 minutes or until the rice is tender and most of the liquid is absorbed.
    3. If desired, sprinkle with the shredded cheese.
