Wild Rice with Walnuts and Dates

Brown rice can be used in place of wild rice!


  • 1/2 cup dates whole pitted
  • 2 cup celery
  • 1 cup onion
  • 1/3 cup chopped walnuts
  • 1 cup water
  • 1 can chicken
  • 1 cup wild rice
  • 1 tablespoon butter or margarine


    1. In a large skillet cook onion in hot butter about 10 minutes or until tender. Add wild rice. Cook and stir for 3 minutes more.
    2. Carefully add celery, broth and water. Bring to boiling; reduce heat. Simmer, covered, about 40 minutes or until rice is tender and most of the liquid is absorbed.
    3. Stir in dates and walnuts. Cook, uncovered, for 3 to 4 minutes more or until heated through and remaining liquid is absorbed.
