Vegetable Fried Rice

  • 1 teaspoon sesame oil or cooking oil
  • 1/4 teaspoon ground red pepper
  • 1/4 pound asparagus fresh
  • 2 clove garlic
  • 2 tablespoon green onions
  • 1/4 cup celery
  • 1/4 cup mushrooms
  • 1 count egg
  • 2 cup rice cooked
  • 2 tablespoon wine white dry
  • 3 tablespoon soy sauce reduced sodium
  • 1 tablespoon canola oil


    1. In a large skillet heat the 1 teaspoon oil over medium heat. Add egg, lifting and tilting the skillet to form a thin layer (egg may not completely cover the bottom of the skillet). Cook for 1 minute or until egg is set. Invert skillet over a baking sheet to remove cooked egg; cut egg into short, narrow strips (about 3x1/2 inch). Set egg strips aside.
    2. In the same skillet saute asparagus pieces, mushrooms, celery, green onion, and garlic in 1 tablespoon oil about 4 minutes or until the asparagus and celery are crisp-tender. Add red pepper, if desired.
    3. Add cooked rice. Cook and toss about 2 minutes or until mixture is heated through. Gently stir in egg strips and serve.
