Bean and Cheese Burritos

  • 1 cup onion
  • 6 count tortilla shells
  • 1 cup shredded lettuce
  • 1/3 cup salsa
  • 1 cup shredded cheddar cheese
  • 1 can refried beans
  • 1 tablespoon canola oil


    1. Stack tortillas and wrap tightly in aluminum foil. Heat in a 350 degree oven for 10 minutes to soften.
    2. Meanwhile, for filling, in a skillet cook onion in hot oil until tender; add refried beans. Cook and stir until heated through.
    3. Spoon about 1/4 cup of the filling onto each tortilla just below center. Divide cheese among tortillas. Fold bottom edge of each tortilla up and over filling. Fold opposite sides in and over filling. Roll up from the bottom. Place on a baking sheet.
    4. Bake in a 350 degree oven about 10 minutes or until heated through. Serve with lettuce and salsa.
