Oat Bran Muffins

Ingredients
- 1 tablespoon canola oil
- 1/2 cup raisins or dried fruit
- 1 count egg
- 1/4 teaspoon salt
- 3/4 cup applesauce
- 1/4 cup honey
- 1/2 cup milk skim
- 1/4 teaspoon baking soda
- 2 teaspoon baking powder
- 1 1/4 cup oat bran
- 1 cup flour
Directions
- Lightly coat bottoms of twelve 2 1/2 inch muffin cups with cooking spray; set aside.
- In a medium bowl combine oat bran, flour, baking powder, baking soda, and salt. Make a well in center of flour mixture; set aside.
- In a small bowl combine egg, applesauce, milk, honey, and oil. Add applesauce mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in raisins.
- Divide batter evenly among prepared muffin cups. Bake in a 400 degree oven for 16 to 18 minutes or until golden and a wooden toothpick inserted in centers comes out clean.
- Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups; serve warm.
