Oat Bran Muffins

  • 1 tablespoon canola oil
  • 1/2 cup raisins or dried fruit
  • 1 count egg
  • 1/4 teaspoon salt
  • 3/4 cup applesauce
  • 1/4 cup honey
  • 1/2 cup milk skim
  • 1/4 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1 1/4 cup oat bran
  • 1 cup flour


    1. Lightly coat bottoms of twelve 2 1/2 inch muffin cups with cooking spray; set aside.
    2. In a medium bowl combine oat bran, flour, baking powder, baking soda, and salt. Make a well in center of flour mixture; set aside.
    3. In a small bowl combine egg, applesauce, milk, honey, and oil. Add applesauce mixture all at once to flour mixture. Stir just until moistened (batter should be lumpy). Fold in raisins.
    4. Divide batter evenly among prepared muffin cups. Bake in a 400 degree oven for 16 to 18 minutes or until golden and a wooden toothpick inserted in centers comes out clean.
    5. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups; serve warm.
