Sheri's Apple Cake

The secret to good Apple Cake is dicing the apples!!!


  • 1 cup chopped pecans
  • 3 cup apples finely diced
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoon lemon peel grated
  • 3 cup flour
  • 2 count eggs
  • 1 teaspoon cinnamon ground
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup canola oil
  • 1 tablespoon vanilla


    1. Allow eggs to stand at room temperature for 30 minutes. Grease and lightly flour a 10-inch tube pan; set aside. Preheat oven to 350 degrees.
    2. In a medium bowl stir together flour, lemon peel, baking powder, baking soda, cinnamon, allspice, and salt; set aside.
    3. In a mixing bowl combine sugar, brown sugar, oil, eggs, and vanilla. Beat with an electric mixer on medium speed for 2 minutes. Add flour mixture and beat on low speed just until combined.
    4. Fold in apples and pecans. Spoon batter into prepared pan. Bake in a 350 degree oven about 1 hour or until a wooden toothpick inserted near the center comes clean.
    5. Cool cake on rack for 10 minutes. Remove from pan. Cool thoroughly on wire rack.
