Pineapple Upside Down Cake

  • 8 count maraschino cherries
  • 1 count egg
  • 1 can pineapple slices
  • 1/4 cup butter
  • 1 teaspoon vanilla
  • 2 teaspoon baking powder
  • 1 1/3 cup flour
  • 2/3 cup sugar
  • 2/3 cup milk
  • 1/3 cup brown sugar
  • 2 tablespoon butter


    1. Melt the 2 tablespoons butter in a 9x1 1/2 inch round cake pan in a 350 degree oven. After butter melts stir in brown sugar and 1 tablespoon water.
    2. Using about half the pineapple arrange the pineapple slices and cherries in the pan. Set aside.
    3. In a medium mixing bowl stir together flour, sugar, and baking powder. Add milk, the 1/4 cup butter, egg, and vanilla. Beat with an electric mixer on low speed until combined. Beat on medium speed for 1 minute.
    4. Spoon batter over fruit in the prepared pan. Bake in a 350 degree oven for 30 to 35 minutes or until a wooden toothpick inserted near center comes out clean.
    5. Cool on wire rack for 5 minutes. Loosen cake from pan; invert onto a plate. Serve warm.
