Fruit Filled Oatmeal Bars

  • 1/4 cup sugar
  • 1 tablespoon flour
  • 1 cup apricots dried
  • 1/2 cup butter
  • 2/3 cup brown sugar
  • 1/4 teaspoon baking soda
  • 1 cup flour
  • 1 cup oats rolled


    1. In a medium bowl combine flour, oats, brown sugar, and baking soda. Using a pastry blender, cut in butter until mixture resembles coarse crumbs.
    2. Reserve 1/2 cup of the crumb mixture. Press remaining crumb mixture into bottom of an ungreased 9x9x2-inch or 11x7x1 1/2-inch baking pan.
    3. Spread with desired filling. Sprinkle with reserved crumb mixture. Bake in a 350 degree oven for 30 to 35 minutes or until the top is golden.
    4. Cool on a wire rack. Cut into bars.
    5. Apricot Filling: In a medium saucepan combine dried apricots and 3/4 cup water. Bring to boiling; reduce heat. Simmer, covered, for 5 minutes. Meanwhile, combine 1/4 cup sugar and 1 tablespoon flour; stir into apricot mixture. Cook and stir about 1 minute more or until thick and bubbly.
