Ranger Cookies

Ingredients

  • 1 count egg
  • 1 cup raisins
  • 1 cup coconut
  • 1 cup oats rolled
  • 1 1/4 cup flour
  • 1 teaspoon vanilla
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 1/2 cup sugar

Directions

    1. In a large mixing bowl beat butter with electric mixer on medium to high speed for 30 seconds. Add granulated sugar, brown sugar, baking powder and baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in egg and vanilla until combined.
    2. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in rolled oats, coconut, and raisins.
    3. Drop dough by round teaspoons 2 inches apart on an ungreased cookie sheet. Bake in a 375 degree oven about 8 minutes or until edges are golden. Cool on cookie sheet 1 minute. Transfer to a wire rack and cool.
