Peanut Butter Oatmeal Rounds

  • 2 1/2 cup oats rolled
  • 2 count eggs
  • 1 cup peanuts chopped
  • 1 teaspoon vanilla
  • 1 1/4 cup flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter
  • 3/4 cup butter


    1. In a large mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed about 30 seconds or until combined.
    2. Add sugar, brown sugar, baking powder, and baking soda. Beat until combined, scraping sides of bowl occasionally.
    3. Beat in eggs and vanilla until combined. Beat in as much as the flour as you can with the mixer. Stir in any remaining flour. Stir in rolled oats and peanuts.
    4. Drop dough by rounded teaspoons 2 inches apart onto an ungreased cookie sheet. Bake in a 375 degree oven about 10 minutes or until edges are lightly browned. Transfer cookies to wire rack to cool.
    5. Chocolate Peanut Butter Oatmeal Rounds: Prepare as above, except melt and cool 3 ounces unsweetened chocolate. After beating in eggs and vanilla, stir in chocolate. Bake in a 375 degree oven about 10 minutes or until edges are set.
