Coconut Macaroons

  • 1/2 teaspoon vanilla
  • 2/3 cup sugar
  • 3 1/2 ounce coconut flaked
  • 2 count egg whites


    1. Lightly grease a cookie sheet; set aside.
    2. In a medium mixing bowl beat egg whites and vanilla with an electric mixer on high speed until soft peaks form.
    3. Gradually add sugar, about 1 tablespoon at a time, beating until soft peaks form. Fold in coconut.
    4. Drop mixture by spoonful 2 inches apart on greased cookie sheet. Bake in a 325 degree oven about 20 minutes or until edges are lightly browned. Transfer to wire rack to cool.
