Peanut Butter Cookies

  • 1 count egg
  • 1 1/4 cup flour
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup peanut butter
  • 1/2 cup butter


    1. In a large mixing bowl beat butter and peanut butter for 30 seconds with an electric mixer. Add sugar, brown sugar, baking soda, and baking powder. Beat until combined scraping sides of bowl.
    2. Beat in egg and vanilla until combined. Beat in as much flour as you can with mixer. Stir in remaining flour.
    3. If necessary, cover and chill dough until easy to handle. Shape dough into 1-inch balls. Roll in additional sugar and place 2 inches apart on ungreased cookie sheet.
    4. Flatten by making criss cross marks with a fork. Bake at 375 degrees for 7 to 9 minutes or until bottoms are lightly browned. Transfer to wire rack to cool.
