Beef and Chipotle Burritos

Ingredients

  • 1 count salsa
  • 1 count sour cream
  • 2 count chipotle peppers
  • 6 count tortillas
  • 1 count garlic
  • 1/4 teaspoon ground cumin
  • 3/4 cup shredded cheddar cheese
  • 1 teaspoon oregano
  • 1 can tomatoes diced
  • 1/3 cup onion
  • 1 1/2 pound beef round steak boneless

Directions

    1. Trim fat from meat and cut into 6 pieces.
    2. In a 3 1/2 or 4 quart crockpot place meat, undrained tomatoes, chopped onion, chopped chipotle peppers, oregano, cumin and minced garlic.
    3. Cover and cook on low heat for 8 to 10 hours or high heat for 4 to 5 hours. Remove meat from cooker.
    4. Using 2 forks, shred meat. Place meat in a large bowl. Stir in cooking liquid to reach desired consistency.
    5. Divide meat among warm tortillas, spooning it just below the center. Top with cheese, salsa, and, if desired, sour cream. Roll up tortillas.
