Chicken and Sausage Paella

  • 1 tablespoon oil
  • 1 tablespoon Old Bay Seasoning
  • 8 ounce smoked turkey sausage
  • 2 tablespoon fresh thyme
  • 1/4 teaspoon black pepper
  • 1 can chicken broth
  • 1/2 cup water
  • 2 cup tomatoes
  • 1 cup peas frozen
  • 3 clove garlic
  • 1 medium onion
  • 2 count green or yellow sweet peppers
  • 3 pound rotisserie chicken
  • 1 cup brown rice
  • 1/2 cup saffron rice


    1. Remove meat from chicken, discard carcass. Put meats, onion, garlic, pepper, and thyme, if using dried thyme, in a crock pot. Pour broth and water over all and cook on low for 7-8 hours or high for 3-4 hours.
    2. Meanwhile, prepare rices according to instructions. They can be prepared together if instructions allow or you can combine them after they are cooked.
    3. Add the tomatoes, sliced sweet peppers, peas, and fresh thyme (if using fresh), and Old Bay seasoning to the crockpot. Cover and turn crock pot to warm (or off if there is no warm feature) and allow to sit for about 15-30 minutes. Serve with prepared rice.
