Garlic Chicken with Artichokes

Use brown rice for lower sodium and higher fiber diets.


  • 1 tablespoon olive oil
  • 3 cup rice cooked
  • 1 count sweet red pepper
  • 12 clove garlic
  • 1 small onion
  • 1/2 teaspoon black pepper
  • 1 teaspoon lemon peel
  • 2 teaspoon rosemary
  • 1 tablespoon tapioca quick cooking
  • 1/2 cup chicken broth
  • 1 1/2 pound chicken breasts boneless skinless
  • 1 package artichoke hearts frozen


    1. Chop garlic and onion and saute in a small skillet in hot oil over medium heat, stirring occasionally, about 5 minutes or until tender.
    2. In a 4-quart crockpot combine the garlic mixture, frozen artichoke hearts, sliced sweet pepper, chicken broth, tapioca, rosemary, lemon peel, and black pepper. Add chicken; spoon some of the garlic mixture over chicken.
    3. Cover and cook on low heat for 6 to 7 hours or high for 3 to 3 1/2 hours. Serve with rice.
