Scrambled Eggs and New Potatoes

  • 6 count eggs
  • 1/2 cup shredded cheddar cheese
  • 1 cup ham or polish sausage
  • 1/4 cup milk
  • 2 tablespoon butter or margarine
  • 1/2 cup green or red sweet pepper
  • 1/2 cup onion
  • 2 cup new potatoes


    1. Coarsely chop new potatoes, onion and pepper. Cook and dice ham or sausage.
    2. In a large nonstick skillet cook the potatoes, onion and sweet pepper in hot butter, covered, over medim-low heat for 10 to 15 minutes or until tender, stirring occasionally.
    3. Meanwhile, in a medium bowl beat together eggs, milk, 1/4 teaspoon black pepper, and 1/8 teaspoon salt with a rotary beater; stir in ham.
    4. Pour egg mixture over potato mixture. Cook, without stirring, until mixture begins to set on the bottom and around the edge.
    5. With a spatula or large spoon, lift and fold the partially cooked egg mixture so that the uncooked portion flows underneath. Continue cooking 4 minutes more or until mixture is cooked through but is still slightly moist.
    6. Remove from heat; sprinkle with cheese. Cover and let stand 1 to 2 minutes or until cheese melts.
