Spinach Quiche

  • 8 count eggs
  • 1 count ground nutmeg
  • 1 count pie crust single
  • 1/2 cup shredded swiss cheese
  • 1/8 teaspoon white pepper
  • 2/3 cup shredded mozzarella cheese
  • 3 cup spinach
  • 1/4 teaspoon salt
  • 1/2 cup half and half
  • 6 slice bacon
  • 1/2 cup sour cream
  • 1/2 cup onion


    1. Prepare and roll out pastry for pie crust. Line a 9-inch pie plate with the pastry. Trim; crimp edges as desired.
    2. Line unpricked pastry shell with a double thickness of foil. Bake at 450 degrees for 8 minutes. Remove foil and bake 4 to 5 minutes more or until pastry is set and dry. Reduce oven to 325 degrees.
    3. Chop onion and bacon. In a large skillet cook onion and bacon until onion is tender and bacon is crisp. Drain on paper towels.
    4. In a bowl stir together beaten eggs, sour cream, half and half, salt, pepper, and if desired a dash of numeg. Stir in onion mixture,chopped spinach, and cheeses. Pour egg mixture into hot, baked pastry shell.
    5. Bake in the 325 degree oven 45 to 50 minutes or until a knife inserted comes out clean. If necessary, cover edges of crust with foil to prevent over browning. Let stand for 10 minutes before serving. If desired, garnish with cherry tomatoes.
