Ingredients

  • 1 cup salsa
  • 2 cup shredded cheddar cheese
  • 1 1/2 cup mushrooms
  • 1/2 cup green onion
  • 1/2 cup poblano chile peppers
  • 2 tablespoon butter or margarine
  • 2 cup milk
  • 1 tablespoon flour
  • 1/4 teaspoon garlic powder
  • 8 count tortillas
  • 4 count eggs
  • 1 count hot pepper sauce

Directions

    1. Slice mushrooms, green onions, and chile peppers. In a large skillet cook mushrooms, the 1/2 cup green onions and chile peppers in butter until tender; drain.
    2. Divide mushroom mixture evenly among tortillas, spooning it along center of each one.
    3. Divide the 1 1/2 cup cheese evenly among tortillas. Roll up tortillas. Place tortillas, seam sides down, in a greased 2-quart rectangular baking dish.
    4. In a bowl combine eggs, milk, flour, garlic powder, and hot pepper sauce (few drops). Pour egg mixture over tortillas.
    5. Bake, uncovered, at 350 degrees about 30 minutes or until edges are set and tortillas are golden. Sprinkle the half cup cheese over top. Let stand 10 minutes.
    6. If desired, sprinkle with additional sliced green onions and serve with salsa.
