Guacamole is very good on these tacos!

  • 1/2 cup salsa
  • 1/4 cup fresh cilantro
  • 1 pound tilapia
  • 8 count corn taco shells
  • 1 1/2 cup shredded cabbage
  • 1 teaspoon lime juice
  • 3 tablespoon mayonnaise
  • 1/8 teaspoon garlic powder
  • 1/4 teaspoon ground cumin
  • 2 tablespoon butter or margarine

    1. Thaw fish, if frozen. Rinse fish and pat dry with paper towels. Place fish in single layer in greased shallow baking pan.
    2. Combine butter, cumin, and garlic powder. Brush over fish. Bake at 450 degrees for 4 to 6 minutes or until fish flakes with a fork. This can be grilled over medium high heat for extra flavor.
    3. Meanwhile, in a medium bowl stir together lime juice and mayonnaise. Set aside.
    4. Add cabbage; toss to coat.
    5. Place fish into the warmed taco shells, spoon some of the coleslaw mixture, top with salsa. Garnish with cilantro, if desired.
