Salmon with Pesto Mayo

  • 1/4 cup mayonnaise
  • 3 tablespoon basil pesto
  • 4 count salmon fillets
  • 1 tablespoon grated Parmesan cheese
  • 2 tablespoon bread


    1. Thaw fish, if frozen. Rinse fish, pat dry with paper towels. Set aside.
    2. Place crumbled bread in a shallow baking pan. Broil 4 inches from heat for 1 to 2 minutes or until bread crumbs are lightly toasted, stirring once. Set bread crumbs aside.
    3. Measure thickness of fish. Place fish on the greased unheated rack of broiler pan, tucking under any thin edges. Broil 4 inches from heat 4 to 6 minutes per 1/2 inch thickness or until fish flakes with fork.
    4. Meanwhile, in a small bowl stir together mayonnaise and pesto; set aside.
    5. Combine toasted bread crumbs and Parmesan cheese. Spoon mayonnaise mixture over fillets. Sprinkle with crumb mixture.
    6. Broil 1 to 2 minutes more or until crumbs are lightly browned.
