Pan Fried Fish

  • 1/2 cup oil or shortening
  • 1/2 teaspoon pepper
  • 1 pound fish fillets frozen
  • 2/3 cup cornmeal
  • 1/2 teaspoon salt
  • 1 count egg


    1. Thaw fish, if frozen. Rinse fish and pat dry. Cut into 4 serving-size pieces. Measure thickness of fish.
    2. In a shallow dish combine egg and 2 tablespoons water. In another shallow dish stir together cornmeal, salt and pepper. Dip fish into egg mixture; coat fish with cornmeal mixture.
    3. In a large skillet heat 1/4 inch melted shortening or oil. Add half of the fish in a single layer, frying on 1 side until golden. Turn carefully; fry until second side is golden and fish flakes easily with fork. Allow 3 to 4 minutes per side for 1/2-inch thickness. Drain on paper towels; keep warm in 300 degree oven.
