Oysters au Gratin

  • 1 clove garlic
  • 1 cup mushrooms
  • 1/4 cup Parmesan cheese
  • 1 tablespoon butter or margarine
  • 3/4 cup soft bread crumbs
  • 1/2 teaspoon Worcestershire sauce
  • 2 tablespoon parsley
  • 1/4 cup wine white dry
  • 3/4 cup milk
  • 2 tablespoon flour
  • 3 tablespoon butter or margarine
  • 2 pint oysters shucked


    1. Rinse oysters; pat dry with paper towels. In a large skillet cook and stir oysters in 1 tablespoon of the butter for 3 to 4 minutes or until oyster edges curl; drain. Divide oysters among four 8 to 10 ounce casseroles or four 10 ounce custard cups.
    2. For sauce, in the same skillet cook sliced mushrooms and minced garlic in remaining 2 tablespoons butter until tender.
    3. Stir in flour. Add milk all at once. Cook and stir until thickened and bubbly. Stir in wine, parsley, and Worcestershire sauce. Spoon over oysters.
    4. In a small bowl toss together the bread crumbs, Parmesan cheese, and the 1 tablespoon melted butter. Sprinkle over casseroles. Bake in a 400 degree oven for 10 minutes or until crumbs are brown.
