Five Spice Chicken Kabobs

Ingredients

  • 2 tablespoon honey
  • 1/4 cup orange juice concentrate
  • 1 tablespoon soy sauce
  • 1/4 teaspoon five spice powder
  • 1 pound chicken breast
  • 1 cup pineapple chunks
  • 1 medium red pepper
  • 1 medium green peppers
  • 2 cup rice cooked hot
  • 1 teaspoon ginger

Directions

    1. Cut peppers into 1 inch pieces. Cut chicken breasts into 1 inch pieces. Thaw frozen orange juice concentrate prior to using.
    2. Combine orange juice concentrate, honey, soy sauce, five-spice powder, and ginger. Set aside.
    3. Thread chicken, pineapple chunks, and pieces of pepper onto skewers alternating pieces and leaving approximately 1/4 inch between pieces.
    4. Grill kabobs for 12-13 minutes or until no longer pink. Use medium heat setting on gas grill and cook covered. For charcoal grill, cook uncovered over medium hot coals.
    5. Brush the kabobs with the glaze in the last 5 minutes of grilling to prevent burning due to the high sugar content of the glaze. Serve with hot cooked rice.
